Sweet Chilli Squid

Serves 1

You will need:

  • 80g fresh prepared squid including tentacles
  • 15g cucumber ribbons
  • 5g julienne red chilli
  • 10g julienne yellow pepper
  • Micro green and red basil
  • Micro peashoots
  • Red amarynth
  • 25g plain flour
  • Pinch of cayenne, chilli powder and paprika
  • Sweet chilli sauce

Cooking Instructions:

  1. Mix flour with the spices.
  2. Mix together the vegetables and the micro herbs and dress with either sesame oil or extra virgin olive oil.
  3. Add squid into the seasoned flour.
  4. Remove squid from flour, shaking the excess flour off.
  5. Deep fry for 30/45 seconds. Drain well.
  6. Build the plate and finish with a pot of sweet chilli sauce
