Sweet Chilli Squid

Serves 1
You will need:
- 80g fresh prepared squid including tentacles
- 15g cucumber ribbons
- 5g julienne red chilli
- 10g julienne yellow pepper
- Micro green and red basil
- Micro peashoots
- Red amarynth
- 25g plain flour
- Pinch of cayenne, chilli powder and paprika
- Sweet chilli sauce
Cooking Instructions:
- Mix flour with the spices.
- Mix together the vegetables and the micro herbs and dress with either sesame oil or extra virgin olive oil.
- Add squid into the seasoned flour.
- Remove squid from flour, shaking the excess flour off.
- Deep fry for 30/45 seconds. Drain well.
- Build the plate and finish with a pot of sweet chilli sauce
